2015 has been such a learning experience for ME! I went from working full-time, making decent pay to unemployed after being with my previous employer after 8 years.

TO struggling to pay bills and trying to keep up! TO wanting to give up and NOT be a productive or successful adult. But, once I got out of that rut which I came to realize that I couldn’t stay there for long because I remembered that God made me for this particular situation. So, that I could be a Blessing for and to someone else with my STORY.

So, I did what I was taught… I went to God in prayer to move any negative feelings from my heart about my sudden end of employment. I started focusing on my nonprofit, Beyond the Curves and MYSELF! Which is when I started on my #GetFit Weight Loss Life Journey, in order for me to become a BETTER ME! Started working part-time from home. Some may say, well that happened in 2014 but it still affected my life in 2015 because I had to play catch up and balance myself.

In spite of my many challenges, I was still able to travel, celebrate my BIRTHDAY the way that I wanted to and made Christmas OK for my Mom they way I wanted to.

And, I couldn’t have done this ALONE! I had amazing SUPPORT and HELP! I had amazing support from many that have been in my life for years and some, that I had just met.

I just wanted to share my reflection of 2015 with my supporters and as we close out 2015, we should reflect and think about how WE CAN BECOME BETTER & GREATER! Don’t continue to say that you want to change or you want something new/different, but are not willing to put in some work! It takes a lot of work, dedication and determination to become a better you!

I pray that we all have a EPIC YEAR IN 2016, come back and check out all of the great things that I am going to be sharing with you all on 2016.

Remember, that you are More Than Your CURVES! HAPPY NEW YEAR TO YOU and a kick ass year to come!

Weight Loss & PCOS: Why is it so Hard?

How many times have we heard lose weight? Easier said than done, right?

So what about PCOS is making this already difficult task even harder? Well let’s look at what’s happening in our bodies, because this is where the issue is starting.

    • Insulin Resistance: Insulin is an important hormone that is responsible for metabolizing glucose or dealing with sugar in our blood stream. It transports sugar to the muscles and if the body has more glucose than is needed, insulin is involved in the process of storing it as fat should we need it later.
    • Slow Metabolism: Women with PCOS have also been found to have a slower metabolic rate. In recent research women without PCOS need about 1870 calories per day while those with PCOS suggested calorie intake is 1445 per day, those with insulin resistance need less.
    • Appetite Control: This means women with PCOS will feel hungry, even if they have eaten all the appropriate things and calories they need for the day.

Thankfully, though, this isn’t the end of the story and there are some things we can do to help us lose weight. I’ll get to that in the next blog post.

This may seem hopeless but I do want to encourage you! Yes, losing weight is important in managing the symptoms of PCOS, but it isn’t an easy road. Our journey to weight loss is REAL and shared by thousands of other women who also have PCOS and on their #GetFit Life Journey.

A simple dish that can get you on to a good start. CHICKEN STIR-FRY (I added almonds)



  • 6 skinless, boneless chicken breasts, cut into bite–sized pieces
  • 2 large onions, chopped
  • 2 large bell peppers, diced
  • 1 cup broccoli florets
  • 1 carrot, sliced into thin half–moons
  • 2 cloves garlic, minced
  • Salt and pepper
  • 1 tablespoon canola oil
  • 3 cups cooked brown rice


  1. Cook rice according to box directions.
  2. While rice is cooking, heat the oil in a large skillet and fry the chicken; when cooked through, set chicken aside.
  3. Sautee garlic, onions, and bell pepper for about 5 minutes, then add the carrots and broccoli and sauté a few minutes more (until the broccoli is hot but not wilted).
  4. Add chicken back to the skillet, season with salt and pepper to taste.
  5. Serve ½ cup of warm brown rice topped with the chicken mixture.

Makes 6 servings
